Iron Chef and master of Latin cuisine


“My mantra is simple,” says Chef Jose Garces in his first cookbook, Latin Evolution. “‘Authentic’ and ‘innovative’ are not contradictory… that’s how my cuisine evolved.” With that mantra, in 2009 Chef Garces won both the Food Network’s esteemed Iron Chef title and the James Beard Foundation’s prestigious Best Chef Mid-Atlantic award. He continues to earn accolades and aficionados for his exceptional restaurants in Philadelphia, Chicago, Scottsdale, Palm Springs, and now ocean side at Revel in Atlantic City.

American born and raised in Chicago by parents who are natives of Ecuador, Chef Garces apprenticed at La Taberna del Alabardero in Marbella, Spain, and many well-known New York kitchens, including the Rainbow Room, Four Seasons Hotel, and Bolivar. Believing that ingredients of the highest quality are integral to his art, Chef Garces grows much of the produce for his Philadelphia restaurants at Luna Farm, his own 40-acre oasis of sustainable agriculture in Bucks County. For his restaurants in other cities, Chef Garces cultivates relationships with local or regional farmers who share his standards.
