Chef Alain Allegretti

Master of Riviera Cuisine

Overview

Raised in Provence, surrounded by the Alps and the abundant vegetables and livestock on his family’s farm, Chef Allegretti realized early that he wanted to cook. And cook he did, helping his grandmother prepare homemade provisions including ragoûts, fresh pastas, sauces and prosciutto, as well as pressing olive oil and making wine.

From there, he went on to hone his culinary gifts at Michelin two- and three-star restaurants on the Côte d'Azur, working under such greats as Jacques Maximin and Alain Ducasse, In 2001 Chef Allegretti traveled to New York to further expand his culinary horizons. He first worked as co-executive chef at Sirio Maccioni’s Le Cirque 2000, and then as executive chef at Atelier, the Ritz-Carlton’s highly regarded restaurant.

Finding that he liked sharing his craft and culture with New Yorkers, in 2008 Chef Allegretti opened a restaurant bearing his name in the Flatiron District. Most recently, Chef Allegretti opened La Promenade des Anglais, an elegantly casual Chelsea restaurant serving up what has become his signature cuisine, the vibrant flavors of his native Riviera, to the acclaim of critics and customers alike.

Azure by Allegretti brings to Revel the rose-tinted, sun-kissed dream of the Riviera. This elegant dining experience highlights Chef Allegretti’s talent for blending Mediterranean flavors, colors and textures through handmade pastas, simply grilled whole fish, a raw bar and, bien sûr, an exceptional wine list.
